Avocado pesto and zoodles (vegan)

Still in the process of trying new low carb dairy free foods...I guess we are on some combination of diets including low carb, paleo(ish), keto(ish), GAPS(ish). The purpose of these diets is to help regulate blood sugar, lower systemic inflammation, and restore the lining of the intestines to repair "leaky guy"-which plays a role in autoimmune disease. Tonight kiddo enjoyed this rich, creamy flavorful veggie and protein rich dinner!


Zoodles:

*use spiralizer or kitchen aid to make zucchini noodles; toss with generous amount of salt and let sit for 15 min.

*rinse noodles, strain, and squeeze water out of noodles by gently pressing or twisting in a clean bread/dish towel.

*saute noodles in ghee in medium hot pan or wok until cooked al dente




Avocado pesto:

*add 2 ripe avocados, a bunch of fresh basil, a handful of soaked/dehydrated walnuts, a generous amount of good olive oil, lemon juice, and salt to taste. Blend until smooth and saucy!



Toss your noodles with your pesto and enjoy!
