Creamy rich tangy dairy free low carb broth (just add your favorite protein and fresh veggies)

You know those new trendy noodle/ramen houses that have seriously upgraded noodles to a whole new delicious level? Well, I was inspired to come up with my own healthy version! I love the rich flavorful broth paired with fresh (not overcooked!) veggies! To save time, I prepare a good size batch of this broth in advance and then take out a small portion as a base for meals as needed throughout the week. Best of all...it's kiddo approved :)
*soak 2 cups of cashews in reverse osmosis water overnight (alternative method: pour boiling water over cashews and soak for 1 hour)
*roast 2 red/orange/yellow peppers, add a poblano for a little kick
*set oven to broil and place peppers on cookie sheet on top rack in oven, turn frequently until just blackened all over, then remove from oven and place in bowl and cover, let cool
*peel skin off, remove seeds and rinse peppers (see how easy it is in the video below!)
*next I rehydrated my sun dried tomatoes I harvested last summer from my garden
*simmer tomatoes in a mix of red wine vinegar and water for about 10 min
*strain and pat dry
*I harvested leeks from my garden in the hoop house, chop and saute onions over medium heat in large pot until translucent (I don't use too many onions to keep it low carb)
*add 64 oz of organic chicken broth (reserve one cup to process cashews)
*add roasted peppers and rehydrated tomatoes
now back to those cashews:
*strain and rinse soaked cashews
*place cashews in high powered blender (I use a vitamix) with 1 cup of chicken broth, add a splash of lemon juice and splash of apple cider vinegar and blend until completely smooth
*blend cashew mixture with the broth in the pot
*add 1 can of coconut cream
*use hand emulsifier to blend ingredients into rich creamy smooth broth
*at this point I added a little more salt and lemon juice to the broth to suit my taste
*you can keep some on hand in the fridge as a base for your favorite veggies or protein and you can also freeze in pint size jars for convenient healthy frozen meals
*I sauteed chicken with some adobo seasoning and added fresh "zoodles" in this fresh creamy soup:
