Gentle on the tummy healing butternut ginger soup (instapot)

I usually post a LOT of low carb recipes and I want to make sure my friends out there know this one is NOT low carb. I've been having some issues with diverticulitis/IBS and found this soup very nourishing and soothing, quick and easy...and it's definitely delicious! I just ate it and I don't feel like an alien is about to erupt from my abdomen!! YAY!


*first dice a sweet onion (leeks are a little gentler on the tummy I think...next time I'll try that!)

*saute onion in a little olive oil in the instapot on the saute setting

*add peeled and diced fresh ginger to taste (I toss in as much as I think my stomach can handle in order to enjoy the anti inflammatory benefits of ginger)

*peel and dice a medium sized butternut squash, either roast in the oven for a rich sweet flavor or toss in with the onions if you are in a hurry

next add:

*half a bag of baby carrots

* 2 peeled diced apples

* 2 cans of coconut cream

* 3 cups of chicken broth or bone broth

*a splash of lemon juice

*3 scoops of collagen for added healing benefits and extra protein (helps repair "leaky gut")

*salt to taste

*2 tablespoons of lakanto monkfruit erythritol sweetener

*lock the instapot lid into place and cook on high pressure for 8 minutes; carefully release pressure manually when finished

*use hand emulsifier to blend, be careful!! It's hot!

*serve with hemp or sunflower seeds on top
