Kid tested and approved delicious brownie recipe (that happens to be GF & low carb!)

My low carb kiddo with type 1 diabetes just celebrated his 15 birthday...and while I'm grateful to celebrate my sweet boy...I admit to feeling sad I couldn't make him his favorite cake (dirt cake with crushed cookies and gummy worms on top!). Fortunately, I found this absolutely delicious gluten free low carb brownie recipe! I swear they taste like the yummiest chewy rich glutinous sugary brownie I have ever had (and I'm kind of an expert on good brownies!) The true test was seeing how my son and his friends liked them...and they scarfed these brownie cupcakes down! Not a crumb was left! They're quick and easy to make too!

(I'm not getting paid by the above mentioned products! Just wanted to share some valuable/yummy info we've learned on our low carb journey!)

Pro-tip: I like making these brownies in mini cupcake tins. They are rich and delicious and this serving size is perfect to control portion size but also satisfy that chewy chocolate craving!
