Yummy low carb zucchini fritters!

Most of my family lives with autoimmune disease in one form or another. In the 20+ years I've lived with autoimmune issues, I discovered over and over again that healthy food and a connection with nature are the source of my healing. When my son was diagnosed with type 1 diabetes, I took the path that has always worked best for us. In order to more effectively manage his blood sugar, we replaced carbs with protein dense, nutrient rich foods that are also rich in healthy fats. I'll be sharing some of these delicious scratch made kid approved recipes here!

Since we began adhering to a low carb diet, my kiddo's blood sugar is near normal more than 90% of the time. I'm so proud of my son for being willing to give up carbs so that he can be as healthy as possible! Not an easy feat for a 15 year old! My yummy recipes help though :)

Here are the zucchini fritters my kiddo asks for daily!

Recipe/process: first I shred 4 med sized zucchinis, blend with salt and let sit until water is released from zucchini. Then drain and squeeze out moisture by wrapping and squeezing zucchini in a clean dish towel. Next mix zucchini with a few eggs, shredded cheese, a little coconut flour, and any seasoning you like. Sautee on medium hot griddle until golden brown! I serve with sour cream mixed with adobo seasoning 😋
