Low carb bread pudding

I love preparing a dish of low carb pudding and having it on hand to warm up for a quick, easy, nourishing breakfast. My low carb kiddo approves :)


blend:

*4 eggs

*1 cup almond milk

*3 tablespoons of lakanto monkfruit erythritol sweetener

* 1/2 teaspoon of cinnamon

*2 teaspoons of vanilla

*add 5-6 slices of cubed low carb bread (I use either homemade or https://julianbakery.com/product/keto-thin-bread/) and toss

*put mixture in medium sized greased glass baking dish

*bake on 350 until golden on top and pudding is set (approx. 40 min)

served with earth balance, low carb lakanto maple syrup, and low carb chicken and apple sausages

**the vast majority of the ingredients I use are organic. It's very pricey but for health reasons it's essential for us.
