Low Carb, Grain Free, Gluten Free Batter (that doesn't fall apart!) For Fried or Baked Meat or Veg

I had come to accept that I might not achieve the desired consistency when it came GF battered/fried/baked foods. But today I had an epiphany! I thought maybe if I combined a couple of techniques maybe it would hold up better...and to my delight, I was right! Below are some good examples of how to use this batter. It's delicious fried or baked! I think it could make yummy veggie fritters too. I'll keep experimenting and report back!
Batter Recipe:
*blend dry ingredients in separate bowl:
*2 cups almond flour
*2 tablespoons arrowroot powder
*1 teaspoon baking powder
*season with salt, garlic powder, onion powder, pepper, paprika and mix
*if you are going to use your batter for fried okra, go ahead and heat up your high heat oil now, I use enough to pan fry but not deep fry
*separate 5 eggs in two separate bowls
*add 1 teaspoon cream of tartar powder to egg whites and beat to stiff peaks
*mix egg yolks with about a cup of water and incorporate in with dry ingredients
*at this point, you want the batter to be pretty thick and sticky
*gently fold stiff egg whites into mixture, 1/3 at a time
*the texture should be about like thick cornbread batter, it should cling to and coat the okra; not too thick but not too thin
*for fried okra, drop sliced okra into batter and mix gently
*gently place your battered okra into your hot oil, it should bubble fairly rapidly as it cooks. I can't tell you exactly what the right temperature is, I just kind of know! Flip over until golden on both sides and drain on paper towels. Shake a little salt on them and eat them hot for the yummiest results!

*I used the same batter for baked chicken strips!

*slice breast into pieces that are about the same thickness and size
*toss chicken thoroughly in batter.
*bake on parchment paper lined cookie sheet in preheated oven at 375 degrees until golden and cooked through

Oh, and I "batch cook" a lot of recipes so I have lots of easy healthy left overs for my t1d kiddo.
