Rich Creamy Chocolate Mousse (vegan/low carb/sugar free)

We have recently discovered, when we use our monk fruit and erythritol sweetener in chocolatey recipes, it's indistinguishable from sugar! (Being that I'm a HUGE fan of chocolate I'm pretty excited!) Here's our new favorite decadent chocolate recipe that happens to be low carb (but you can't tell!) For those of us eating low carb, portion size is part of the equation. My favorite thing about this recipe is it's so rich and delicious that all you need is a little to satisfy that sweet tooth!


*First, soak 16 oz raw organic cashews in filtered water for 6-8 hrs., rinse and drain

*add cashews to high powered blender (I use a vitamix)

*add about 1/2 cup water

*add 1/4 cup almond milk

*add the cream from 2 cans of coconut cream (I don't use the liquid part)

*I slowly added the monk fruit/erythritol sweetener little by little until I liked the flavor, sweeten to suit your taste (I used around 1/4 cup)

*add a teaspoon of vanilla extract

*add 1/4 cup of cocoa powder

*add a pinch of salt

*blend (pulse and scrape sides, keep blending until smooth), it should be a pudding-like texture

*chill and serve (it thickens a bit into a thick rich mousse once it is chilled)

*enjoy :)
